It has come to Maud's attention that Osric is the go-to source for human knowledge of human things, so he has decided to dress in his greatest finery and pay him a visit. Maud does not really understand gender-appropriate clothing, and has thus decided that ladies' hats, with their bright colors and feathers, are the grandest and most noble hats available.

This is all Grimmald's fault, really, for making the mistake of talking Osric up in Maud's presence. Osric, meanwhile, would like Maud, Maud's greasy thugs, and Maud's hat to get the hell off his lawn.
